4th International Symposium on Recombined Milk and Milk Products Over 340 attendees from 43 countries around the globe came together in Cancun, Mexico for the 4th International Symposium on Recombined Milk and Milk Products. Dr. Phil Tong, Professor, Dairy Products Technology Center, and Dr. Joe O'Donnell, Executive Director, California Dairy Research Foundation, served as Co-Chairs of the Technical Program Committee. According to Tong, the program was almost 4 years in the making and included 38 speakers from 13 countries giving over 24 hours of presentations over the course of three days. In addition 22 contributed technical posters were presented at the conference. The program addressed socioeconomic importance of recombined milk, offered enabling technologies to enhance the quality of recombined milk products, and identified new technologies, opportunities and challenges for the recombined milk products sector of tomorrow's consumers. Recombined dairy foods are products made from preserved dairy foods and other ingredients to provide sources of dairy foods to people in areas where there was not a sufficient fresh milk supply. While this remains a critical source of nutrition in developing countries, recombining technology is now increasingly used to produce a wide array of new value added dairy foods in developed countries throughout the world including the United States. The program was conducted under the auspices of the International Dairy Federation, Brussels, Belgium. The host committee was lead by Marc Beck, Senior Vice President of Marketing for the United States Dairy Export Council, Arlington, VA.
