The next Cheese Short Course I will be held March 24-27, 2015

Dairy Science and Technology Basics for the Farmstead/Artisan Cheesemaker Short Course will be held in the fall of 2014 (Dates TBD)

Cheese Short Course I is a four-day intensive course designed to teach each participant the basic scientific information and practical skills needed to understand and manufacture cheese. Topics covered include properties and function of the ingredients in cheesemaking, integration of cheesemaking principles into the manufacturing process of cheesemaking, cheese yield, sensory properties of cheese, full day of hands-on cheesemaking, pH and T.A measurement, team project case analysis presentations.

Who Should Attend

Individuals interested in understanding and applying the fundamental principles necessary to produce cheese. The course is valuable to those working in cheese plants and also to individuals in sales, marketing, accounting, quality control, and other fields that support the cheese industry.

Course Instructors
Phillip S. Tong is Professor of Dairy Science at California Polytechnic State University. Dr. Tong has 27 years of experience at Cal Poly organizing and and teaching Dairy Foods Short Courses. He is Past President of the American Dairy Science Association. He is widely recognized for his research and outreach activities to support the dairy industry. Dr. Tong received his Ph.D. from Cornell University in Food Science and was a Research Scientist at Kraft Technology Center prior to joining Cal Poly in 1988.

Rafael Jimenez is Professor of Dairy Science at California Polytechnic State University. Dr. Jimenez has an active research and teaching program in Dairy Foods. He is Section Editor for the Journal of Dairy Science. Dr. Jimenez received his Ph.D. in Agricultural Chemistry from the University of California at Davis and served as Assistant Professor of Food Science at Univ. of Illinois prior to joining Cal Poly in 1995.

Moshe Rosenberg is Professor and Specialist, Dairy Engineering and Technology at U.C.Davis. Dr. Rosenberg has been a regular instructor in the Annual Cheese Short Course since its inception in 1988. He received his doctorate from the Israel Institute of Technology in 1985.

John Lyne is Director of Dairy Technology for Chr. Hansen’s. Since moving to United States in 1996, work experience has included various roles in Production, Quality and Technical Management for Ingredient Supply Companies, including Gist-brocades/DSM. Having rejoined Chr. Hansen in 2004, current responsibilities include the introduction and support of new culture and enzyme concepts, acting as a bridge between Chr. Hansen Innovation in Denmark and the customer as well as having a role in Key Account Management John received his Master of Science from the University College Cork.

Enrollment will be limited to the first 35 registrants. Registration requests received after the first 35 will be placed on a waiting list. Because of the popularity of this course, we suggest you confirm your registration before making any travel arrangements. In the event of insufficient enrollment, Cal Poly reserves the right to cancel the course and provide a full refund to registrants.

Cancellations, and Refunds
Conference and Event Planning must receive registration and full payment to allow event participation. Registrations will not be processed with incomplete or missing payment information.

Please note that the registration fee includes a $75.00 non-refundable deposit. Conference and Event Planning must receive cancellation requests in writing 15 days prior to event start in order to receive a full refund less the $75.00 non–refundable deposit. Refunds will not be given for cancellations received after the March 3rd, 2014 deadline.  Registration fees cannot be transferred.
