Dairy Cleaning and Sanitation

Course Description:
Principles of microbiology applied to cleaning, cleaning
chemistry, good manufacturing practices, clean in place procedures,
and HACCP principles will be explained in a simple manner.
The course will be taught in English, however the instructors
are Spanish speaking so that the main concepts can be instructed without
a language barrier. Besides technical information the course is designed
to improve communication in dairy plants in cleaning and sanitation
practices. All instructors have academic and industrial experience.
Topics which will be addressed include:
* Principles of Cleaning and Sanitation in Dairy Plants
* Microorganisms and the Dairy Plant
* Cleaning Objectives and Procedures
* Cleaning and Sanitizing Agents
* Clean in Place Systems
* Verifying the Cleaning Effect
* Good Manufacturing Practices in Dairy Plants
* HACCP principles

Who should attend:
This course is designed for line workers and supervisors
in dairy plants. Course may also be of interest to people in allied
fields/professions.
Course Location:
Registration, classroom lectures and laboratories will
be held in the Cal Poly Dairy Products Technology Center (Building 18-2)
Register Early!
Enrollment will be limited to the first 35 registrants.
Registration requests received after the first 35 will be placed on
a waiting list. The registration fee includes a comprehensive course
syllabus, refreshment breaks and lunch for both days of the course.
Group Discounts Available:
We now offer a 15% discounts for 3 or more registrants from the same company! All payments must be submitted at the same time to gain the group discount registration rates. If as a result of a cancellation you fall below 3, the regular registration price will be applied.
Refund Policy
All registration cancellations will be subject to the following
limitations:
Full Refund
Registrants who cancel by phone at least two weeks prior to the
first day of the course (less a $25 service charge).
No Refund
Registrants who cancel less than two weeks prior to the first day
of the course.
In the event of insufficient enrollment, DPTC reserves
the right to cancel the course and provide a full refund to registrants.
